Simple Buttercream

  • 12 oz butter
  • 1 lb 4 oz powdered sugar
  • 40 grams egg whites
  • 1/2 tsp lemon juice
  • 3/4 tsp vanilla extract
  1. Using the paddle attachment, cream together the butter and sugar until well blended.
  2. Add the egg whites, lemon juice and vanilla.  Blend in at medium speed, then mix on high until light and fluffy.
  3. For a softer buttercream, blend in 1 oz water.

Salted Caramel Buttercream

  • 1/4 cup sugar
  • 2 tbsp water
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1 stick salted butter
  • 1 stick unsalted butter
  • 1/2 tsp sea salt (or more)
  • 1 1/2 cups powdered sugar
  1. Cook sugar and water until it caramelizes or a deep amber color.  Don’t touch the pot until the color starts to turn.  Then mix slightly just to make the color even throughout.
  2. Once sugar is a deep amber color, add the heavy cream and vanilla, stirring continuously.
  3. Continue to stir until all the lumps are dissolved.  Let cool to room temp.
  4. In a mixer, mix the butter and sea salt until pale and fluffy.  Add the powdered sugar.
  5. Slowly stream in the cooled caramel into the butter mixture.
  6. Once all added, mix on medium-high speed until light and fluffy.
